Thanksgiving Extravaganza: Shipwrecked Turkey

This is the third of three planned posts today.

Last night, my daddy-in-law began fixing the turkey we just devoured. It involved an ice chest and ten gallons of salt water. He soaked the turkey in the brine overnight and put it in the oven around 9:00 AM this morning.

I don't know where he learned this technique but, wow, what a bird! The white meat was juicy and flavorful. The dark meat was a little tougher than normal but still delicious. Sandwiches will be great tomorrow!

We also had mashed potatoes with gibblet gravy, sweet potatoes with a cap of roasted marshmallows, green bean casserole, cornbread dressing, cranberries, buttered rolls, fruit salad, and sparkling red grape juice. Ah! What a feast!

Your father-in-law may be a fan of Alton Brown of the Food Network. He also soaks his turkeys in a brine solution overnight. Sounds like it works, too!
